Date balls, your new favorite holiday snack

With the holidays around the corner bringing appetizers and desserts to your office party, friend potluck or family gathering can be stressful. You don't want to be a co-out and be the person that brings something pre-made, but between the never ending holiday family stress and your busy schedule, making something too complicated from scratch is out of the question. The only solution to this potluck problem is to make plate that is both delicious, home made and easy to make. I know it may seem impossible, but there are such dishes out there. Being creative with appetizers can be a hassle so my go-to is dessert. Dessert is easiest during the holidays because you can never have too much dessert and everyone loves a sweet treat around the holidays. When doing the paleo diet I discovered a dessert recipe for date bites that was so delicious that i know people who aren't even on the paleo diet would love it. Also this recipe is easier than ever to make and better yet, you are able to freeze the bites and preserve them for a later time. These date bites are the perfect dessert for any holiday event you have coming up and are guaranteed to impress any holiday crowd.


Ingredients

2 cups Medjool dates, pitted

1 tsp Pink himalayan salt or sea salt

1 tsp Vanilla extract

2 tbsp Coconut oil

1/2 cup shredded Coconut, unsweetened

2 cups Walnuts


Instructions

In a food processor, add all ingredients and process until well blended. *Note you may have to stir up a bit to get all ingredients equally processed.

Using your hands, or a small scooper roll mixture into bite sized balls.

On a parchment lined baking sheet sprinkle shredded coconut and cocoa powder and roll bites until completely covered.

Place in storage container until ready to eat.

Store in the refrigerator or freezer.
