Why sheet pan dinners are your best friend

Sheet Pan Fajitas

If most of you are like me, then you live a pretty on the go lifestyle and don't have time to think about measuring ingredients or use multiple pots and pans to make dinner. If you, reader, are like me you never want dinner to be a hassle, but you would rather starve then eat one more microwave dinner. Well reader, let me introduce you to your new best friend, sheet pan dinners. Sheet pan dinners only require one pan, few ingredients and usually take thirty minutes or less. As a person who 1. Barely has time to plan dinner 2. Hates doing dishes and 3. Can only manage a few spices and ingredients at once, I have quite the love affair with an easy sheet pan recipe. One of my favorite sheet pan recipes is fajitas. It is so easy to make for a group of people if you are entertaining and makes great leftovers (say good morning with a spicy pepper egg frittata or scramble from the leftover peppers and chicken). The diversity of this dish is also great because the protein can be substituted with shrimp or steak.

Ingredients

1 ½ lbs of Chicken breasts sliced into ½ in strips

1 Yellow onion

3 Bell Peppers (red, yellow, green your choice)

2 cloves of minced garlic

Cilantro

4 Limes

Olive oil

Seasoning (Feel free to use pre packaged spicy taco seasoning)

2 tsp chili powder (preferably 1 tsp ancho chili powder 1 tsp regular)

1 1/2 tsp ground cumin

1 tsp ground paprika

Salt and freshly ground black pepper

For Serving

Avocado slices

Sour cream

Tortillas

Diced tomatoes

Mexican style cheese

Directions

Preheat oven to 400 degrees

Put peppers, onion, seasoning and garlic into a gallon sized bag.

Squeeze all lime juice out of the limes and throw the juice and some lime peels into the bag.

Seal the bag and shake until chicken and pepper mixture is evenly coated and spread the contents on the bag on the sheet pan.

Drizzle olive oil over mixture and add salt and pepper to taste.

Throw pan in oven for 18-25 mins, stir halfway thru.

Remove from oven, garnish with cilantro and add salt to taste and toss.
