Food about to go bad? Here is what to do....

Since being in college I have gotten in the terrible habit of buying too much food for just myself and having a good amount of food go bad. It has taken me four years to perfect how to buy groceries for only one person but sometimes I am guilty of this terrible habit. One food item I consistently buy/steal from the dining hall and see go bad is bananas. Every week I buy bananas thinking I am going to eat them all, but just end up seeing their peels go from yellow to brown. Although I have developed this terrible habit I was raised in a family where I was always told “there people out there starving, you have to eat everything on your plate” so naturally I do not like to waste food. I am sure even if you aren't a college student like me you can relate too this problem of buying too much and seeing that bag of spinach in the back of your fridge go to waste. It is a very sad feeling, but there are a few things I like to make if my groceries are about to go bad. Because I have a terrible tendency to buy too many bananas, banana bread is a must. I love it because it is super simple to make and it is perfect to meal prep for breakfasts or snacks. My favorite recipe is the best because it takes about 45 minutes to bake and you only have to use one bowl!
Ingredients
3 large very ripe bananas
1/3 cup melted butter
1 cup sugar
1 large eggs beaten
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
pinch teaspoon salt
Directions
Preheat your oven to 350ºF.
Lightly grease and flour a 4x8 -inch loaf pan. Set aside.
In a large mixing bowl, combine the bananas and butter in a large mixing bowl
Mix in sugar, egg and vanilla.
Sprinkle in baking soda and salt.
Add the flour last into the mix.
Pour mixture into greased pan and place in oven for 45-60 mins.
Let cool, remove from pan and slice.
