Easy Desserts

I am a total dessert-a-holic. Anything sea-salt and dark chocolate flavored I cannot resist. When I go out to dinner and I think I am just going to “look” at the dessert menu I always end up getting something warm and gooey and delicious. If I need a coffee late in the afternoon, it almost always comes with a croissant or scone of sorts. To put it simply, I love desserts and sweets. Unfortunately I do not have the luxury of eating hand made sweet treats as much as I would like, but whenever I do get a craving I do have a few go-to’s that are quick and easy. My favorite easy dessert is brownie in a mug. It is easy to make, easy to clean up and a single serving meaning you won't overindulge on a whole pan of brownies like I tend to do. Also this recipe is a pure paleo recipe and still tastes just as good as a non-paleo brownie. But if I do have a craving for a "real dessert" (AKA not paleo), I love making galete. A galete is a cross between a pie and a tart. It usually has a flaky crust and a berry medley inside. It tastes delicious as warm desert topped with whipped cream or vanilla ice-cream or served cold as a early morning breakfast with a side of hot coffee. The most important aspect of this is that its easy to make, its versatile and delicious. Both of these dishes are guaranteed to satisfy your sweet tooth!

Galette

1 pound strawberries (hulled and cut into small pieces)

11 ounces blueberries

1/4 cup sugar

1 tablespoon cornstarch

1/2 teaspoon ground cinnamon

Zest of 1 lemon

3 pie crusts (1 1/2 package of pre-made refrigerated pie crust)

1 egg

1 teaspoon water

Sugar for garnish


Instructions

Bring pie crust to room temperature by allowing it to sit on kitchen counter for about 15 minutes. Prepare a large baking sheet by lining it with parchment paper. Preheat oven to 350 degrees F.

In a large bowl, combine strawberries and blueberries. Sprinkle with sugar and cornstarch, gently toss with fruit to coat. Gently stir in cinnamon and lemon zest and set aside mixture.

Carefully unroll one of the pie crusts on a lightly floured surface. Using a bowl with a diameter of approximately 4 1/2″ to cut out circles out of the dough, similar to how a cookie cutter is used (you should be able to get 4 circles out of one pie


Paleo Brownie in a mug

4 Tablespoons of almond flour

2 Tablespoons of almond or coconut milk

2 tablespoons of coconut sugar

2 tablespoons of cocoa powder (unsweetened)

1 egg

A pinch of salt

½ teaspoon of vanilla

Add dairy free dark chocolate chips (optional, but highly recommended)


Instructions

Combine all the ingredients into a microwave safe mug

Microwave for one minute, add ten second depending on your preferred consistency.

Add dairy free dark chocolate chips on top

Enjoy!
