The ultimate pasta recipe to make you feel at home

Nothing in this world beats a home cooked meal made by your mom. I know this because my mom is the best cook I know. But as much as I love eating a home cooked meal, there is no way I can stand living at home anymore. Don’t get me wrong I love my family, but I am sure most of you can understand the sense of relief you feel when you move out. Never the less, I always get a craving for my mom’s cooking every now and again. Unlike my mom, I do not have mad cooking skills, but she has taught me a few of her tricks so I can have the taste of home whenever I start getting a little homesick. One of my mom's signature dishes is prosciutto lemon pasta. I have the best memories of eating this dish with my family at the dinner table. This dish got me and my family through volleyball games, school nights and the occasional family movie night together. This pasta just reminds me of my home and family. So when I start to feel homesick but don't have time to drive all the way back home, I make this big pasta dish to make me feel like my mom is cooking in my kitchen. This is one of my moms less complicated recipes, making it easier for those of us who do not necessarily have the best cooking skills. Also to make this pasta it only requires one pan and a pot to make the pasta water. Dishes are easy, clean up is easy and the pasta is amazing.
Ingredients
Pasta
Olive oil
Pinch of salt
1/2 cup of lemon juice
1/2 a red onion
A bunch of asparagus
1 clove of garlic
1 cup of spinach
10-15 Shrimp (optional depending on preference)
1/2 cup of prosciutto (optional depending on preference)
Parmesan cheese (topping)
Directions
Heat water to a boil with of salt
Add pasta into water and cook until soft
In a separate large pan add diced onion and chopped garlic with olive oil and a pinch of salt.
Wait until garlic and onion is cooked down.
Then add asparagus and protein (shrimp or prosciutto).
Wait until mixture is fragrant then add lemon juice.
Mix in cooked pasta and spinach.
Sprinkle Parmesan on top to taste.
